Baked Aubergine and chickpea hummus

Hi girls,

as always for the quick, light and fast cooking section, today I propose you a really tasty recipe, which you can also offer to your friends.
Ingredients:

- Aubergine

- Chopped pistachios

- 150 gr. Already cooked chickpeas

- Extra virgin olive oil

- Lemon

- Bread crumbs
Cut the aubergines into slices of about 1.5 cm in height and pass both sides in chopped pistachios and breadcrumbs.
Preheat the oven to 180 ° C.

Place the aubergines on a baking sheet over which you have spread some parchment paper and let them cook for 15 minutes.
In the meantime, put the already cooked and heated chickpeas, oil, lemon and a little water in a mixer ... Chop everything until you get a fairly soft and compact cream.

Place the chickpea hummus base on a plate, and then place the aubergines on top.
